The Archangel was created in 2010 at Roast – Detroit and it remains one of my most successful cocktails. I wanted to introduce apricots into a crowd-friendly cocktail, keeping it simple yet innovative. At the time both gin and apricots where scarce on any cocktail menu and I wanted to change that.
Originally, I tried incorporating several different apricot liquors with the gin but had better success infusing the gin with dried apricots. So simple and has a great shelf-life! I use dried apricot-infused Bombay Dry Gin as the base of the Archangel. It works out great; the apricots add a beautiful sweet and tart flavor and the botanicals from the gin still shine through. The allspice flavors of the Bitter Truth Pimento Dram pair perfectly with the apricot. Fresh lemon juice counters the sweetness. The Archangel has only three components yet explodes with flavor and is sure to be a crowd-pleaser.
2 oz. Apricot-infused Bombay Gin
1 oz. Fresh Lemon Juice
½ oz. Bitter Truth Pimento Dram
Pour all ingredients into a cocktail shaker, fill with ice and shake vigorously. Then, double strain into a cocktail glass. Finish with a lemon peel and enjoy!
*Apricot-Infused Gin: Combine 1 cup of dried apricots with 1 (750ml) bottle of Bombay gin in a sealed mason jar. Let the gin infuse for 24 to 48 hours. Finish by straining out any partials. Store in a bottle. You’re now ready for service.
